Rich, delicious and festive, badam burfi or almond burfis are a much loved Indian sweet that can be made in 30 minutes making your festivals even more yummy and hassle free!
No Indian festival is ever complete without sweets. They are an essential part of all occasions and the best part is that every festival has it’s own specific set, too! For example, thandai based sweets dominate Holi celebrations and dry fruit based ones do so for Diwali. Therefore, sticking to the festive spirit, here is my absolutely yummy and rich badam burfi or almond burfi recipe. This easy to make, under 30 minute Indian burfi recipe is a keeper. Not only do they taste incredibly amazing, but they also come together effortlessly. Moreover, the badam burfi is also a 5 ingredient recipe! I am telling you, making festive sweets couldn’t get easier.
The main ingredient is ground almonds in the badam burfi (almond burfi) recipe. While you could grind almonds at home, I have taken the easier way out. For my recipe I have used store bought ground almonds (blanched almond flour). This reduces both, time and effort, which are both critical when preparing for an upcoming festival. Above all, what makes this burfi a beginner’s recipe is the ease of making the sugar syrup. A lot of Indian sweets need a one string or two string sugar syrup consistency. This could be challenging when you are new to making sweets. However, for this recipe all that you need is for the sugar to just dissolve in the water. And then you are all set to make some mouthwatering badam burfis – easy peasy!

This badam burfi (almond burfi) recipe yields about seven large sized sweets. Nonetheless, you can easily double of even halve the recipe as per the batch size of the sweets you’d like to make. Moreover, I have flavored these almond sweets with cardamom powder as well as saffron milk. We personally love the flavors they impart to the sweets, but feel free to use any or neither as per your taste. In fact, if you like rose flavored sweet treats, you could also flavor them so by adding some rose essence. Therefore, you can customize the flavor and look of these beautiful, festive treats just as you’d like them. Furthermore, since these are for Diwali, I have garnished the burfis with edible silver foil (warq), slivered almonds and dried rose petals.
However, feel free to decorate and style them as you please. Simply garnishing them with chopped nuts and/or saffron strands also look lovely. Once you make these sweets, you can store them in air tight containers for up to a week to ten days. While here in London, they stay fresh outside but in India I’d recommend storing them in the fridge. Your beautiful and delicious badam burfis (almond burfis) make for a wonderful gift option. Badam burfi (almond burfi)
Equipment
- Shallow cooking pot
- Square tin (to set the burfis)
Ingredients
- 1 cup ground almonds
- Âľ cup sugar
- â…“ cup water
- 1 tsp cardamom powder
- 1-2 tbsp ghee use nut butter for a vegan recipe
- 1 tsp saffron strands soaked in 2-3 tbsp warm milk optional
For garnishing
- edible silver foil optional
- 2 tbsp slivered almonds
- 2 tbsp dried rose petals
Instructions
- Grease the tin with ghee (or nut butter) and set it aside
- Add sugar and water to the cooking pot, over medium heat. Mix well and cook until the sugar dissolves completely
- When the sugar syrup comes to a boil, add the cardamom powder and the ground almonds. Reduce the heat to medium low and mix in quickly, stirring continuously until the almond mixture forms a lump and starts to leave the pan
- Add in the saffron milk (if using, if not then jump to the next step), mix well and cook until the milk dries up
- Remove this in the greased tin and press it down to form a tight block and cut them in squares but do not remove them. Set the tin aside so that the burfis cool to room temperature
- Once cooled and firm in shape, garnish with edible silver foil, slivered almonds and rose petals. Enjoy these delicious badam/almond burfis this festive season!
Notes
- I have used store bought blanched almond flour for this recipe. To make ground almonds at home, soak the same quantity of almonds in water overnight. Next day, remove their skins and pat dry them completely. In a mixer jar, add the skinned nuts and pulse 3-4 times until you get a fine powder
- When buying ground almonds, get the blanched almond powder. These will result in a better texture of the burfis than using regular almond meal
- Store the burfis in air tight containers once they cool down. These will stay fresh up to 10 days in the refrigerator
- If you like your burfis less sweet, you could reduce the sugar to 1/2 cup
