A guilt free, crispy, crunchy, spicy and super delicious alternative to the much loved deep fried French fries
Who loves crispy, crunchy and well seasoned fries? I doubt there’s going to be anybody who’s not going to raise their hands for this one. From kids to adults, we love potato fries and why not, after all they taste that incredible. I feel French fries make for a great snack as well as a party appetizer, besides being a yummy accompaniment. By accompaniment, I mean, as a side with burgers, sandwiches, roasts etc. However, the only reason we probably hold ourselves back from enjoying them is because of the calories. At least, I do, although that takes an incredible amount of will power to do so. Now, deep fried potato chips are not a healthy option. But since we, at home, love potatoes and fries so much, my baked and spicy potato fries are a winner.
Though baked, they still are incredibly crunchy and totally addictive. And all this without the calories of deep frying. Doesn’t this baked potato fries recipe sound like a life saver? It surely has answers to all those french fries cravings. Moreover, this is a quick and easy recipe as well. All you will need to do here is cut the potatoes, season and then bake them. And all this under 30 minutes. Also, you could season and flavour these chips/fries as per your choice. I have made mine spicy and loaded with herbs and garlic, since I love the flavour of garlic. However, you could keep them plain, flavour them with parmesan shavings or any other flavour that you and your family love. And once you make my oven baked potato fries at home, I promise, you are not going to be ordering them from outside again.

Quick and easy recipe
Like I said, my baked, spicy potato fries are indeed a very handy recipe. Both, when hunger strikes or when you have unannounced guests at home. And since potatoes are generally always in our pantries, you can make these oven baked fries in no time. Additionally, in a way this is a one pot recipe as well. That’s because, unlike other recipes I don’t blanch the potatoes before baking them and yet, they cook evenly and wonderfully. I generally use medium to large potatoes for this recipe, which I then cut in inch thick batons. However, if you like, you could also cut them in wedges or even give crinkle cuts.
Thereafter, I coat them really well with olive oil, my flavouring herbs and spices and then bake until done. Nonetheless, one important pointer to bear in mind is to pat dry the potatoes throughly, before cooking. This small yet significant step will make sure that you always get crisp and crunchy fries. Also, when seasoning the raw potato batons I use only half of the salt and the remaining amount I drizzle over the freshly baked spicy potato fries. This ensures deeper absorption of the salt, making the fries taste yummy. Since potatoes love salt, this is again a crucial step.
Serving suggestions
You can serve your lip smacking oven baked fries with a piping hot cup of chai and/or a chilled glass of beer as well. And for dipping, you could serve them with ketchup, mayonnaise and even some mustard sauce. In fact, these fries are an amazing option to serve along side dal and rice as a delicious side. Baked spicy potato fries
Equipment

Ingredients
- 3 large potatoes cut in 1 inch thick batons
- 3 tbsp olive oil
- 2 tbsp chili flakes
- 1 tbsp paprika powder
- 2 tbsp mixed dried herbs
- ½ tsp turmeric powder
- 1 tbsp garlic minced
- salt to taste
Instructions
- Wash the potato batons 3-4 times in water, until the water runs clear. Then drain the potatoes and dry them on a kitchen towel
- In a bowl, mix together all the ingredients and half of the salt. Toss the potatoes in this mix until all of them are evenly coated with it
- Lay them over a baking tray in a single layer and bake in a pre-heated oven at 220°C for 12-15 minutes. Remove the tray, give the potatoes a flip and cook the other side for another 12-15 minutes
- When done, remove your baked, spicy potato fries and drizzle over the remaining salt. Serve them hot with ketchup and/or mustard sauce. Enjoy!
Notes
- I have left the skin on my potatoes for the fries. When doing so, make sure to wash and scrub the potatoes really well before proceeding to cook with them
- You can add any spices/herbs/flavours of your choice in step 2
- The potatoes will slightly shrink in size once baked, so make sure to keep them thick when cutting
