This Kerala style egg roast, is one of my favourite egg recipes. Also called as mutta roast in Malayalam, it is spicy and so yummy. Moreover, you won’t need a long list of spices to make it too. I had this egg roast at a friend’s place here and instantly asked her for the recipe. As it happens, while I have stuck to her method, mostly, it has my touch as well. This is made with a lot of onions, and so has a semi-thick consistency. However, it is not an egg curry. You can have this delicious roast with Kerala parottas or any Indian flatbreads too. Although, I mopped it up with some yummy coconut milk rice. Therefore, it tastes yum even with rice.

This spicy egg preparation, is actually a popular street food in Kerala. My friend says, there are these handcarts that cook and sell this with parottas. I only realised why there are so much in demand, once I had them. Not only does this taste good, but is filling too. Eggs are a super food, so they make for the best on-the-go meal. Don’t you agree?

Quick & easy recipe

My Kerala style egg roast is a quick and easy egg recipe. I have made it with hard boiled eggs, which have been tossed in an onion-tomato masala. And, to cut your cooking time further, you can keep the eggs boiled and ready before hand. Hence, this is your perfect weekday dinner recipe. These crisp eggs, coated in a spicy, yummy masala, will make your regular dinners so much more delicious. The addition of freshly crushed black pepper, chilis and red chili powder add heat to the roast. While the onions and tomatoes provide a hint of sweetness. But, if you want to go easy on the spices, please do so.

This is my favourite recipe on a rainy afternoon or a chilly night. In fact, this dish is best when you are craving for something spicy and yummy. And at the same time, quick and easy too. 🙂

Kerala style egg roast

A super yummy and easy egg roast recipe, perfect with Indian breads and rice

Equipment

  • Shallow cooking pot

Ingredients
  

  • 3 large eggs hard boiled
  • 1 large onion sliced
  • 1 tbsp ginger paste
  • 1 tbsp garlic paste
  • 1 medium tomato chopped
  • 1 tsp black pepper crushed
  • 1 tsp red chili powder
  • ½ tsp turmeric powder
  • 2 tsp garam masala
  • 5-6 curry leaves
  • 3-4 green chilis slit
  • 2 tbsp coconut oil
  • 1 tbsp coriander leaves
  • salt to taste

Instructions
 

  • Make vertical slits on the eggs and keep them aside
  • Heat the oil and add the curry leaves
  • Now, add the sliced onions

  • Once they turn soft and translucent, add the ginger garlic pastes

  • When their raw smell disappears, add the chopped tomato, chilis and ¼ cup hot water (to cook the tomatoes)

  • Let the tomatoes turn mushy and then add the spice powders

  • Mix well and cook for 5-6 minutes and then add the eggs

  • Over medium flame, toss them around in the onion masala so that it coats well

  • When that is done, sprinkle the garam masala, turn the heat up and toss the eggs around for 2-3 minutes, so that it gets a nice, crisp layer

  • Garnish with some chopped coriander leaves and serve the Kerala style egg roast hot, with parathas and/or rice
